Persimmon Chia Pudding

4 Ripe Persimmons

3 Dates

2 T. Chia Seeds

1 t. Grated Fresh Ginger

1 T. Fresh Lemon Juice

½ - 3/4 c. Coconut Milk

½ t. Pumpkin Pie Spice 

 

Place all in a high speed blender and blend for 45 seconds. Garnish with cinnamon, and any fruit, nuts or seeds of your choice.
